What Cabo Bob’s taught us about quality, flavor & focus

A couple of weeks ago, we had the privilege to visit Austin, Texas, and spend the day with Don Brinkman, the founder of Cabo Bob’s. A local chain known for its fresh, made-from-scratch Mexican food. We came for the food, but we left with something bigger: a renewed sense of what’s possible when a brand commits fully to quality, flavor, and consistency.

A brand with personality

So, who is Cabo Bob? He’s not real, but his spirit is. According to Don, Cabo Bob is a mythical Baja surfer who lives stress-free and follows the waves. Each restaurant embodies this vibe with hand-painted murals inspired by San José del Cabo, creating a laid-back, coastal energy that’s truly unique.

Product comes first

Don believes in simplicity and flavor. Cabo Bob’s isn’t focused on being flashy with ingredients. They focus on nailing the final product.

  • Everything is made fresh: from the tortilla dough to the queso.
  • The proteins are grilled over wood fire, giving them a deep, smoky flavor.
  • Their sauces and salsas are developed in-house, with the perfect balance of heat and tang.
  • And perhaps most important: the food feels good. You leave feeling satisfied, not heavy..

Our favorite moment? The burrito.

After visiting three locations, we sat down for lunch and had the best burrito we’ve ever eaten. The tortilla was freshly pressed. The meat was grilled just minutes earlier. Warm queso tied everything together, and the balance of heat and texture made it unforgettable. No cold, soggy toppings. No off-flavors. Just harmony in every bite.
