Discovering real Mexico City
At Salsa Shop, we believe good food tells a story. That’s why we travelled to Mexico, not just to taste, but to listen, learn and reconnect with the roots of real Mexican food. Mexico City welcomed us with open arms, full of colour, flavour and people proud of their traditions.
Our first stop: Taquería El Califa. Packed with locals, this place delivered flavor in its purest form. Think:
- Grilled cactus (nopales): slightly tangy, totally fresh.
- Guacamole: creamy and familiar, like home.
- Pastor tacos: rich, spicy, well-balanced.
- Bistec tacos: juicy, full of umami, and hands-down the best bite of the night.
That meal reminded us why we came. To be close to the real thing. Because the difference between good and unforgettable? It’s in the details.
Later that week, we travelled to Pachuca, a region known for barbacoa. There, in a remote mountain village, we shared a meal with a young chef named Roberto. He cooked lamb barbacoa the traditional way: in an underground pit, served with handmade tortillas and cactus salsa. Pure, honest food. Exactly what we want to bring to our menu.
Back in Mexico City, we visited high-end restaurant Monte Cristo and met culinary legend Alejandro Escalante, author of _Tacopedia_. We spoke about tradition, innovation and even explored the idea of launching our own tortilla factory in the Netherlands.
From street tacos to fine dining, this first part of our journey showed us that Mexican food is full of soul and we’re bringing that spirit home to Salsa Shop.
